Red Hot Whiskey Chili


Ingredients

  • 1 pound sliced bacon
  • 1 pound ground beef
  • 2 red and/or green sweet peppers, chopped
  • 1 large red onion, chopped
  • 1 1/2 cups whiskey
  • 2 15 - 16 ounce cans red kidney beans, rinsed and drained
  • 2 12 ounce cans or bottles dark beer
  • 3 cups beef broth
  • 1/2- 1 11 ounce can chipotle peppers in adobo sauce, snipped
  • 1 6 ounce can tomato paste
  • 1/4 cup packed brown sugar
  • 3 tablespoons liquid smoke
  • 3 tablespoons bottled hot sauce (such as Frank's, Da Bomb, or Texas Pete)
  • 1 teaspoon chili powder
  • 1 teaspoon packaged seasoning mix for chili
  • Diced or shredded cheddar cheese, tortilla chips, and/or sour cream (optional)

Directions

1. 
In a 6-quart pot, cook bacon over medium heat until crisp; drain on paper towels (cook in batches, if necessary). Discard bacon dripppings. Chop bacon and return to pot. Add ground beef, sweet peppers and onion to pot and cook until beef is browned and peppers and onion are tender. Drain fat. Remove beef mixture from pot.

remove pot from heat. Add whiskey to pot, stirring to scrape up any browned bits from the bottom of the pan. Return pot to heat. Bring whiskey to boiling and simmer, uncovered, about 5 minutes or until whiskey is reduced slightly. Add bacon and beef mixture back to pot. Add beans, beer, broth, chipotle peppers in adobo sauce, tomato paste, brown sugar, liquid smoke, hot sauce, chili powder and seasoning for chili. Bring to boiling. Reduce heat. Simmer, uncovered, for 3 hours, stirring occasionally.
3. 
Serve with cheddar cheese, tortilla chips, and or sour cream, if you like.
